Dixie Chicks

Lime Pickles

7-9 pounds cucumbers, washed and sliced or chunked
Put in a large canning kettle. Soak in 2 cups slacked lime to 2 gallons water for 24 hours.
Stir, then drain. Wash several times in clear water.
Soak in clear water for 3 hours. Drain and set aside.

In a large bowl mix:
2 quarts vinegar
9 cups of sugar
1 teaspoon whole cloves
1 teaspoon celery seed
1 teaspoon pickling spices
1 Tablespoon picking salt or uniodized salt
green food coloring

Pour over pickles and let stand overnight. Simmer 35 minutes. Put in jars and seal.
7 pounds cucumbers=6 quarts of pickles
