DO YOU WASH & REFRIGERATE YOUR EGGS?-

I don't think it's just the UK, I think it might be all or most of Europe that doesn't refrigerate and wash their eggs. My husband's family is from Holland and the first time I went over there, I was shocked to see shelves and shelves of eggs right next to the bread! No refrigeration!

Yes, we wash and refrigerate our eggs. We do this because we sell a few dozen per week to a local farm to plate restaurant and it is current law if you sell eggs commercially. Besides, here on the Big Island it rains A LOT and we don't trust that the soiling of the eggs is just mud or manure, so we err on the side of caution. Dirty eggs are not big sellers.
 
I don't sell eggs, but I do give to friends on occasion. I don't wash them, and keep them on the counter. If I get the rare dirty egg, I'll wipe just that spot with a damp paper towel. I think the UK method sounds smarter.
I live in the Central Valley of California where we have clay soil. In the winter when it rains the hens often will get the clay on the eggs and it stains the shell. If selling the eggs I happily eat these myself
 
It all depends on the laws where you live. It is illegal in Colorado to sell unwashed eggs to consumers. This applies to small egg producers that sell directly to consumers as well as larger commercial produces that are licensed and inspected. According to the Colorado Department of Agriculture:

"CDA requires egg washing and sanitizing by cottage food producers, persons selling to farmers markets and CSAs, and by Class1 dealers. Wash water temperature should be at least 120°F, and the rinse water must be a minimum of 115°F. Dish washing liquid that is free of scents and dyes is acceptable.

Eggs can be sanitized by dipping in a solution of 1 tablespoon bleach (preferably labeled for use on eggs) to 1 gallon of water before storage. Dry eggs before storing as moisture may enter the shell pores when eggs cool upon refrigeration."

I wipe my eggs and refrigerate until I sell them and then wash my eggs immediately prior to sale.

Each locale is different so you need to verify that you are selling within the law.
