DO YOU WASH & REFRIGERATE YOUR EGGS?-

I'm in Panama. It's uncommon for eggs to be refrigerated here, even store bought eggs are not in the fridge. If they're not absolutely filthy, I leave mine, unwashed, on the counter for up to one week, then move them into the fridge as the temperatures are hot enough to encourage embryo development... not quite hot enough to actually hatch eggs, but in the low 90's in the daytime, high 80's at night. Eggs that require washing are used the same day as I'm superstitious that way, don't want to make myself sick by washing away the protective coating and then storing it for a couple weeks. Periodically I put any eggs that have been in the fridge over a week or so into my rice steamer for 18 minutes to make hard boiled eggs. I store the cooked eggs, shell and all, in a gallon sized, glass jar (repurposed pickle jar) in my fridge and take them out as needed. I also serve them whole, shell and all, to my dogs as a cold, high protein treat, and served them mashed, shell and all, to my chickens. Speaking of pickle jars... If I take the time to peel some of the cooked eggs, I like to stuff them into the leftover pickle or pepperoncini brine for pickled eggs and refrigerate. Pickled eggs will last a very long time in the fridge, (if you can quit eating them!).

My mama had a huge basket sitting on the counter where she kept her eggs. I never witnessed anyone refrigerate eggs until I was a teenager. :)
My mom also kept butter in a covered dish on the table, never refrigerated any fresh fruits or vegetables, kept bread in a pan on the table covered with a dish towel, and had a metal container of bacon grease that sat on the stove top....
Very old school :D

If dirty, I do rinse under warm running water and, if necessary, wipe the dirty spot with a wet paper towel. Not often necessary as I keep my nests clean. I use shredded paper as my nesting material, that stuff is amazingly absorbent and if a hen does poop in the nest it doesn't make a mess. And yes, I do refrigerate. City girl, what can I say, lol. :idunno

I do the same. @BigBlueHen53. Warm running water, scrub with an old toothbrush if necessary, dry with a paper towel, put in my personal stash and eat it scrambled in the morning. Most of them are clean. As for refrigeration, everyone I know wants them refrigerated. DH is allergic but would freak over me eating them unrefrigerated... not worth the argument. In the fridge they go, then. I really don’t care and other people do care. It’s worth it to keep the peace.

I think it's because, in the US at least, people EXPECT their eggs to be refrigerated. It was news to me to learn that we're the only country that does.

See we have bacon grease kept in the fridge I also filter it with a coffee filter when I pour it in our stove is gas stove with hard cast iron and a griddle on the middle 5th burner many cast iron skillets also but yes Ma did not refrigerate the eggs we sold ones to sell where kept in the milk house it was cooler there people stopped there for milk and eggs
