yes, Standard Poodles are anything but froo-froo dogs
They are a hunting breed and have some good protective insticnts. Again, you are going to have to get a good breeder who breeds for correct temperament.
Watchdog's suggestion of Belgians are another idea.
One thing to remember, it is better to have a dog that would run and hide than one that would bite when it shouldn't. Any dog that will bark is going to be a good protector, just by the nature of his presence. The most important part of SCH and other protection training is the obedience. Biting is the very last stage for a reason and it should never be up to the dog to decide to bite or be protective on it's own.
I'd suggest going to talk to responsible breeders of the dogs you are interested in. They can tell you best if their particular dogs will fit your situation.
