I just made an amazing recipe and DH fell asleep, I had to tell someone!
I remember eating this as a child visiting my grandmother in Hungary and forgot how good it was til now!
It's this:
Madar Tej (translates to bird's milk) but its also referred to as Floating Islands.
3 eggs separated
1/3 cup sugar
500 ml milk, whole
1/2 vanilla bean, cut lengthwise
In a large saucepan bring water to boil.
Turn the heat down to slow simmer.
Beat the egg whites until stiff peaks form.
Drop 2-3 large spoonfuls of egg whites into the simmering water.
In a few seconds the meringues puff up, gently turn them over.
Boil meringues for a few seconds, then transfer them into a serving bowl.
Discard the water, reserve pot for later use.
Beat the egg yolks and sugar until thick and creamy.
Place the milk and the vanilla bean in the reserved saucepan.
Bring the milk to boil. Remove from heat.
To temper beaten egg yolks add from the hot milk, stirring constantly.
Add the egg and the hot milk mixture to the remaining milk in the pot.
Bring to simmer on medium heat. Stir continually until sauce thickens.
Take out vanilla bean and pour sauce over the meringues.
Serve hot or chilled.
