Fun with Zucchini

What do you do with all your zucchini?

Not long ago, I proudly shared pics of our first zucchini.

Now we have so many, it is overwhelming. If they get too big, I give them to the chickens, but even they are tiring of zucchini!

Here's a dish I have made several times which uses a lot, Basically you slice it, and saute it in skillet w onion and garlic until it begins to caramelize. Then cook it further till it starts to break down. Add cooked tubular type pasta , some of the reserved pasta water, and cook a bit longer will the squash becomes 'jammy.' I add chopped fresh basil and parmesan at the end.

I did exactly the same thing. Proud first baby courgette photo.....now it's out of control 😂 and my birds are also getting a bit tired of them.
I see a beautiful cat in that photo 😍
He looks like he is just begging for some of that courgette......

I did find it needed a bit more chocolate so increased the cocoa to 1/2 cup and added another 1/8th cup white sugar. They are not fudgy but more like a moist chocolate cake.
I grate and freeze some extra in bags measured out for them. When thawing to use in the brownies do not drain. You need that moisture.

Giant ones? I slice in half long wise, remove seeds and fill with spicy spanish rice, bake til tender, top with cheese and bake to melt the cheese. Pretty good that way too.

Another thing I have done is to replace 50% of course he noodles in lasagna. It helps to sweat a bunch of the moisture out if trying that. I set 1/8-1/4" thick slices in a warm 220° oven on a rack in a cookie sheet and watch closely. The goal is to kind of dry them out so they don't make the he lasagna soggy.

I have stated harvesting the zucchini, yellow squash, and even cucumbers when very small, like 3 or 4". Then we don't have a lot of surplus. They are very tender and delicious. Of course there are always those that get away.....

They certainly can get a bit crazy lol.

I will never understand how something the size of a submarine can hide so well under a few leaves.
