One year I had a large potato patch planted. The neighbor sent one of his boys over to plow the field next to my garden. As a favor, he swung in and plowed my big garden,,,,,potatoes and all.. lol about a quarter of an acre.
my daughter grows potatoes in tall plastic garbage cans. it works well for her.
 
Yes, initially it is a lot of work to fill containers. In my daughter's case, she is limited to a small back yard for gardening. For potatoes you fill the container gradually as the vine grows.
I have been using five gal buckets. I have filling them down to a science. You are right about watering.
A couple years back I had 70 buckets set up. I spent way too much time watering. I tried several "self watering" systems. Most of which did not work so well.

I remember you took the buckets in the truck bed and had them dump the soil you bought right into the buckets. I thought that was a great idea, if you had to buy dirt anyway.

I'm too cheap to buy dirt 😂 lol
