Got eggs & Zucchini - these patties are the best!

Just so people know I have used both yellow and green squash and it worked well individually or mixed. Glad to see that you liked this recipe let me know what you think. Off to the kitchen to put up pepperoncini peppers (got 2.93# yesterday plants are loaded with new blooms) and Blackberry jelly - picked enough berries this morning to make two batches. We are anxious to taste jelly since we are getting a really nice Bing cherry favor in the berries - Happy cooking!!
 
Gosh, these sound so delicious. My squash just came in and I will try this recipe soon. I'm thinking they may be good to take to a family picnic on July 4th. We have wonderful cooks in our family but nobody has brought these. We had fried squash today. Just pared, sliced, egg mixture and Italian bread crumbs in olive oil. So good! Don't you all just love summer and fresh vegetables!

Those sound just wonderful. I didnt plant squash this year, I dont know why. I will plant them this fall tho. I might have to stop by the local stand and get some zuchs....mmm mmm mmm
 
I made these the other night for supper. I put in some cream cheese too. I mixed it all up and dropped it into a deep fryer like hush puppies. I made the Outback Steakhouse Bloomin' Onion sauce to dip these in and OMGosh! My DH and I ate every single one and then he said "Go make some more!" THIS WAS SOOOO DELISH!!!! We will be cooking these alot more now

You cant just say you made the Outback Bloomin Onion sauce, its required that you give us the recipe!
