About to start my 4th hatch with my NR360 - first 2 (one shipped, one fresh) were at factory settings (99.5) and went flawlessly. My 3rd was a hot mess. Had shipped eggs with some badly detached air cells and only had any development in 3 out of 24 - hatched 2 & both had not 100% absorbed yolk sack. ( I started them upright to settle air cells)…anywhoo after the horrid hatch I bought a Govee. I’ve been running my bator for several days and my Govee is reading 2 degrees lower than the bator. I have to run at 101.5 to average 99.7 (99.5-99.9) - so before I set these next eggs… which do I trust?

Not unless you've calibrated it or compared it to a calibrated thermometer. I have an older NR360 that has been flawless in holding temp; it is .2*F low compared to a calibrated mercury medical thermometer. Even knowing that plus the four years of experience with the NR360, I still use the calibrated thermometer for the duration of every incubation.
