To make gravy chop up boiled liver and 1 boiled egg. In skillet put 1/4 cup of pan dripping from turkey 2 tablespoons flour and stir til brown on medium. Add 2 -3 cups broth from boiling liver the chopped egg & liver and stir just til it starts to thicken. Wish i was there to lift that turkey.
 
Ive never had one not stuffed ? One more question and I will leave you alone. what do you cook first in the oven ? sides or turkey?

chopped egg ? like diced ? what does that do.

Jane I have never done the egg thing for gravy... I usually just use drippings... Does it make a big difference. I must try it once. I usually boil the neck and stuff for stock and cut up the liver for the dressing.

I thought you had to use bacon grease and flour. i didnt know you used the juice. guess thats why mine has never turned out. I have tried a few times . then i added milk like breakfast gravy. It was pretty nasty
 
Turkey is not really that hard to cook. Empty the cavities, rinse it out thoroughly. Throw some salt in the cavity if you are not stuffing it. You can put some herbs (rosemary, thyme and sage) and some sliced oranges in the cavity also, if you like. Pat the skin dry and smear butter on the skin and pop it in the oven uncovered. If the skin gets to browning to early put a foil tent over it. This makes crispy skin. If you don't care about crispy skin you can cover it more tightly earlier in the baking.
