That's how I do it too!Excuse me. Put lots of cheese on your tortillas
Add meat if you want it.
Add your jalapenos. No enchilada wants to be mild.
Add sauce to the pan to prevent sticking.
Roll up, and add your enchiladas
Cover in sauce
More cheese is a must!
Bake @350 for 30 minutes. Unless you are impatient. Then twenty minutes works too.
It is easier to get them out of the pan if you cut them in half.
