Skinned him. Not boiling water for one bird. 2lb 15oz carcass. He was small when I got him. Previous owners believed in feeding a chicken their allotted amount per day. He also had 11 hens to woo and 5 acres to roam. I’m assuming if he was contained a little bit, and fed better the first 8 weeks of his life, he’d have another pound on him.

Figure after ice water dunk, he will rest in the fridge and be grilled Friday night.
Updated post with weight. Excuse the dirty dishes.

I like a marinade of soy sauce, lemon juice, garlic, and just a bit of coriander seed. Best on the grill, but also good baked.
Yummy.. I am still fating up my young Bresse roosters and plan to do the spatchcock style on the grill in the next couple weeks.

Man of his word! He looks just the right size to split in half and grill.
ETA: About 2 pounds?
Figure there’s no time like the present to do what needed to be done. I may take some time to make up my mind..... but once it’s there, I tend to move quickly.

Almost 3 pounds is a fine weight. Especially without skin and giblets.
