Yummy.. I am still fating up my young Bresse roosters and plan to do the spatchcock style on the grill in the next couple weeks.I like a marinade of soy sauce, lemon juice, garlic, and just a bit of coriander seed. Best on the grill, but also good baked.

Skinned him. Not boiling water for one bird. 2lb 15oz carcass. He was small when I got him. Previous owners believed in feeding a chicken their allotted amount per day. He also had 11 hens to woo and 5 acres to roam. I’m assuming if he was contained a little bit, and fed better the first 8 weeks of his life, he’d have another pound on him.
