Hello from Central Texas

Hello and welcome to BYC! :frow Glad you joined.
I too planted my chickens pen with trees and shrubs. But I'm zone 5 so my plantings would be very different from yours.
My goals were only for shelter and beauty. I don't want the chickens destroying them. I used weeping conifers, knock out roses, perennial grasses, hydrangeas, dappled willow, sedum, ninebark, and this was in the area I penned in.

Don't know what it is but the chickens spend a lot of time under and in it.
I love that! Beautiful.

A picture of your setup would be helpful in determining what may work in your situation. I don't think I would depend on shrubs for wind protection, and especially not for any nutrition. My birds just like to scratch around them looking for bugs, and if there's something they like to nibble, it just disappears and never grows back. The best wind break may be some boards or a sheet of plywood. Many people in very cold climates build a 3-walled coop/run with one open wall covered in hardware cloth for the shielded side. Look into open-air style coops.
