Hey Grandpa, What's for Supper? Part 2

So last night I waited until the last possible moment to decide what to cook for dinner. I ended up with pan roasted pork chops and mushroom 'gravy', served over riced cauliflower that I sautéed in a little olive oil to soften and heat it, and a bellyache salad. Surprisingly, my potato loving husband thought the cauliflower was great. Yay!

I did it last week,
geesh.

The jet blue fares were kind of high to get our son home for spring break, but my husband did not even flinch... I just figured out why.
I cook when the boy is home.

I'm having another of those I don't want to cook anything nights. If I had my way I'd have popcorn for dinner and ice cream for dessert. BUT, I pulled myself together enough to throw a meatloaf in the oven with a baked potato for hubby and butternut squash for me, and a salad. Meatloaf is my husband's favorite. I don't care much for it, but it's easy.

the older we get the less we want to cook we already did that so i will take the popcorn and maybe a mixed drink
 
I'd vote for popcorn and ice cream. maybe we should pick a night and all have the same thing in a show of solidarity

Tonight was spare ribs with apricot/soy/garlic/mustard sauce, rice and Swiss chard with onions and Parmesan.
