Tonight was spare ribs with apricot/soy/garlic/mustard sauce, rice and Swiss chard with onions and Parmesan.

Tonight we'll be up your way, spending the night in Portland for a biopsy at OHSU in the morning. We'll find some place to have dinner around the hotel tonight. Nothing to eat before the biopsy, so no breakfast for me

So last night I waited until the last possible moment to decide what to cook for dinner. I ended up with pan roasted pork chops and mushroom 'gravy', served over riced cauliflower that I sautéed in a little olive oil to soften and heat it, and a bellyache salad. Surprisingly, my potato loving husband thought the cauliflower was great. Yay!

Tonight is Kalbi (Korean style short ribs) on the grill, a butter and herbed rice, and probably a salad or maybe brussel sprouts. Poudding Chomeur (a mapley gooey pudding cake - French Canadian). It's in the oven now -- we'll see how it turns out.

Well, hmm. My short ribs turned out good, but the cake is in the I'm not so sure column. Hubby liked it. I didn't very much, although the texture of the cake part was pleasant.
 
Agree the roasted veggies sound great. I'll keep that in mind when shopping tomorrow

Tonight is zucchini casserole. I really need to sit down and menu plan for the week.
 
Got a take and back box of shrimp with herbs and seasonings from Kroger fresh meat and seafood dept.. OMG it was really good. They prepare the shrimp or fish for you however you like, then seal it in the pack and you just take it home and put it in the oven. YumYum! We had the shrimp with sweet potato fries. You can get whatever shellfish or fish you want, and they give you choice of seasonings or make recommendations. Easy peasy too!
