Hey Grandpa, What's for Supper? Part 2

Actually I picked up a container of Morton Lite Salt and it's not half bad. Of course, it's also not half salt, but it's been way easier to get off the salt using just a sprinkle of that than to go cold (and unsalted) turkey.
 
Tried the Ranch flavor of the tuna stuff tonight. (I had to buy three packs with the coupon). Ranch flavor was ok, I used it in egg salad and we had tuna-egg salad sandwich. Pretty good. & canned fruit. Could have used an avocado. :)
 
Last night while I was being a good and prepared cook and starting some pineapple salsa, my husband reminded me that we were meeting some friends for happy hour. Crap!!! It was 4:00 and we had to leave by 4:15. So I put my half made salsa in the fridge, left the kitchen in a mess, shooshed the chickens into the coop (in the rain), had to then fix my hair which was a disaster because when (I think) I have nothing to do outside of the house I don't give my hair much thought, change my clothes, and we're off. So at happy hour I had crab cakes and a fantastic brussel sprout salad with cranberries and walnuts and balsamic vinegar. I was supposed to share that with my husband who had salmon, but I ate about 7/8 of it before he could get his fork in there.

So tonight I finish my pineapple salsa to go on carmelized pork tacos. Served with a kale and apple salad. I dislike kale, but I'm really really trying to find a way to prepare it that I enjoy. Help?

I prepare Kale by feeding it to the hens and then eating the eggs!

It is the perfect solution for Kale.

Keep giving it to them. chickens will often turn their nose up at something the first couple of times but will eat it later.

Kale is one of the best things for them. Chop it up at first. Sometimes chickens will be lazy if you let them. Mine know that they need to work at things.

For example, I give them cabbage cut into quarters with the heart removed. They will work at it for half a day but they eat it. Also, I cut a hole out of a pumpkin and they will eat the seeds from the inside. They love stuff like that! I do start them off eating greens as chicks though.
 
Thank heavens there are other folks who don't like kale. Sometimes I feel like I'm the worst person on the world for not eating it or feeding to to my family. I do eat a fair amount of greens (spinach, Swiss chard, collard greens, even polk when I was little), but kale is just

I found boneless skinless chicken breasts on sale. yesterday I put some in the crockpot with Mexican seasoning, some salsa and enchilada sauce. Shredded the meat and made enchiladas. Put the second pack in the crock with bbq sauce, raspberry preserves, onion and garlic. shredded that and it's in the freezer for another night. Have the last pack in the crock now with pineapple, garlic, ginger, soy, scallions for an Asian style. That will also go in the freezer. Easy meals some night!

I have tried with the kale chopped, whole, in the suet feeder, on the ground, hand feeding, since they were chicks (they're now 11 months old). They just won't have it. If I chop it up and add it to some cabbage, lettuce, parsley, and other greens, they pick around it. They don't like pumpkin or chard or pomegranates or bananas or carrots either. So I avoid giving them those things and all is good. They're get lots of greens and free ranging every day and they're healthy girls.

I have had kale the last two out of three nights. I bought some bagged already chopped organic kale from Trader Joe's. The first night I sautéed some in a little bacon fat (about 1T) and garlic. I actually thought it was pretty good. The next time I made a kale and apple salad, with dried cranberries and slivered almonds and dressed in olive oil and lemon juice. I dressed the kale about 2 hours ahead of time so maybe it softened a bit. Surprisingly I liked that, too. Maybe the secret is the kale from TJ's. Who knows. For me it's not the taste, it's the texture. Kind of tough and chewy and sticks in the throat texture. Counter-intuitive for eating a green.

Good on you for planning ahead. I wish I was better at that, but I'm not and probably won't acquire that skill at this point in my life.
