Hey Grandpa, What's for Supper? Part 2

Last night was greek style chicken - pounded breasts marinated in olive oil, lemon juice, oregano, and garlic, grilled. Served with a Greek yogurt that I strained most of the liquid out of, combined with garlic, a little lemon juice, grated cucumber, fresh dill, and chopped pistachios (really one of my favorite ways to make chicken). Sides were steamed asparagus and rice.

Went shopping and no parsnips to be found

. but you all have me on the look out for them! Used yams, onions, mushrooms, garlic, broccoli, and a bell pepper for my roasted veggies. I forget how much I love roasted yams, so yummy!

I had two small pork roasts, two oranges that were getting pretty skanky looking, and about a quarter cup orange marmelade. Squeezed the juice into the marmelade, added some jarlic and mustard, added some water to the jar and shook it well. Put the roasts in the crockpot and topped with a chopped onion then poured the orange mixture over top. cooked on low all day long. Totally forgot salt and pepper, etc.....but it came out pretty darn good anyway. Pulled pork and roasted veggies, a fine meal any day

Last night was macaroni & cheese with Starkist's new Tuna Creations mixed in. WE used the hot & spicy kind, it wasn't very good, but I had a coupon for that stuff. Tuna is tuna. You shouldn't try to change the flavor! We had canned green beans with it. And icecream. Poor man's supper, lol!

I'm eating tuna right now. White albacore, with a little salt and an avocado. My favorite lunch.
 
Tonight we are having gently seasoned, browned beef, gourmet beans, lettuce torn gently, cubed vine ripened tomatoes, crisp onion, aged shredded cheese, all served on a warm specialty bread with a delicately yet robustly seasoned soft and farm fresh sour cream. At least that's what Taco Johns wants me to believe!
