Hey Grandpa, What's for Supper? Part 2

We made chicken noodle soup with corn dumplings.

The corn dumplings were a stroke of genius out of desperation. We are out of baking powder and don't keep self-rising flour on hand. I seen the corn meal, and realized it's self-rising. So I used 1 1/2 cups of the corn meal, 3/4 cup flour, 1 cup milk, 4 tbsp butter, heavy hand of Italian herbs, pinch of black pepper, 1/2 tsp baking soda and 1 tsp salt. I used a cookie dough scoop to drop balls of the dough into the boiling soup. They turned out great!

We also made chocolate chip cookies today. Yum!

We are stuck home in a mandated shelter-in-place (we're in IL) due to the COVID-19 outbreak so we cook, craft, and catch up on garden work. Oh, and take care of three new chicks I "accidentally" got yesterday when I was buying poultry feed. :oops:
Next time you need to sub baking soda for powder, add tablespoon of vinegar for each cup in the recipe. You can also use yogurt or buttermilk instead of plain milk.

Baking soda and vinegar is a good tip. Didn't think of that.
I don't keep yogurt or buttermilk though.
 
Princess ventured out to the grocery store today. Did not check on the TP or paper towels as we have plenty. Food was in good supply, but there were limits on some items.
Tonight we will eat roast chicken (store cooked), potato salad (store prepared), and mashed maple/butternut squash - 'Sour prepared.'

My DW is out doing volunteer work and brought home 8 half gallons of milk. We kept two and sent the rest over to the neighbors.

The date is up on them so I made yogurt this morning on my break!
