Next time you need to sub baking soda for powder, add tablespoon of vinegar for each cup in the recipe. You can also use yogurt or buttermilk instead of plain milk.We made chicken noodle soup with corn dumplings.
The corn dumplings were a stroke of genius out of desperation. We are out of baking powder and don't keep self-rising flour on hand. I seen the corn meal, and realized it's self-rising. So I used 1 1/2 cups of the corn meal, 3/4 cup flour, 1 cup milk, 4 tbsp butter, heavy hand of Italian herbs, pinch of black pepper, 1/2 tsp baking soda and 1 tsp salt. I used a cookie dough scoop to drop balls of the dough into the boiling soup. They turned out great!
We also made chocolate chip cookies today. Yum!
We are stuck home in a mandated shelter-in-place (we're in IL) due to the COVID-19 outbreak so we cook, craft, and catch up on garden work. Oh, and take care of three new chicks I "accidentally" got yesterday when I was buying poultry feed.![]()
