Now my stomach is growling!!

Will have to stop at store to get mushroom but will be worth. Plus its really easy and fast. I need to get at least 5 dozen of my zucchini patties made tonight before the last of my zukes go south for the winter.

It's too hot here to cook so we ordered take-out Mexican tonight. Easy!
 
DD called wed. night, county att. wants her to wait a couple of days to see if the police can find her little one. If there is no news by sometime today, they are aressting step-mother and charging her with kidnapping. Hopefully then she will tell them where she is. They are letting the father sit and rot in jail for a while before they extridite him. They will make sure that THIS time he loses all rights the these girls also-several years ago he lost rights to his first two daughters with his first wife. I hope they take step-mohter and father's new baby away from them. How can anyone think that they can raise a child after all that has gone on?! So now we are waiting for a phonecall to start a road trip to get our sweet DGD as soon as they find her. Talked to the older one we got back already on wed. She is sooo very happy. She had her first day of kindergarten(3wks late!!!) on wed. She loved it! She had been looking forward to it all year, then had to miss out for a bit. That shows that they didn't even have her enrolled in school before they hid her. Their brother is very worried about his little sister, but glad his other one is home. All this has gone into federal charges now, they both doomed themselves to hell!

It was very hot with only single digit humidity here for the last three days. If you go outside, the air sucks all moisture out of your mouth. I put a roast in the crockpot. DH and I were here smelling it all day, wanting to eat it . It was very good, had leftover mashed pot., leftover rice, and green beans with it, I have been trying to bake cookis all week. I am either gone with DH to DMIL's house or it is WAY to hot to turn the oven on. When I make cookies I like to make BIG batches so I have some for a while. This one makes 7doz.! So I will bake some and freeze some to bake later. I've had to put my freshly baked bread in the fridge(I hate that) because with the heat it has been molding in two days!

Tonight is easy, the leftover cornish pastie type things, I think rice this time and broccoli. I think I will put a cheese sauce over all this time, make them a little different. Left over washington apple cake for dessert.

that is a wonderful idea. no telling what they have told the girls about their mom or grandma.. i would imagine that mommy hates them and things like that....gl and i am hopping you get the little one soon

Here is the recipe for Chicken Marsala. If you are Costco member or see in stores - I use the frozen "chicken tenders" (small fillet off chicken breasts). Pull out the number I want thaw in cold water for about 15-20 and I'm off to the stove!! I always have a bag in the freezer and they save me all the time when I have forgotten to take something out.

The following recipe is the recommended side and it does go perfectly. Have made this meal for guest several times and everyone love it.

Anyway here goes: This recipe is from All Recipes.com Rate: 4 3/4 stars by 1,593 cooks!

Chicken Marsala

Ingredients:
1/4 cup all-purpose flour for coating
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon dried oregano
4 skinless, boneless chicken breast halves -
pounded 1/4 inch thick 4 tablespoons butter
4 tablespoons olive oil
1 cup sliced mushrooms
1/2 cup Marsala wine
1/4 cup cooking sherry

Directions:
1. In a shallow dish or bowl, mix together the flour, salt, pepper and oregano. Coat chicken pieces in flour mixture.
2. In a large skillet, melt butter in oil over medium heat. Place chicken in the pan, and lightly brown. Turn over chicken pieces, and add mushrooms. Pour in wine and sherry. Cover skillet; simmer chicken 10 minutes, turning once, until no longer pink and juices run clear.


Orzo with Parmesan and Basil

Ingredients:
2 tablespoons butter
1 cup uncooked orzo pasta
1 (14.5 ounce) can chicken broth
1/2 cup grated Parmesan cheese 1/4 cup chopped fresh basil
salt and pepper to taste
2 tablespoons chopped fresh basil

Directions:
1. Melt butter in heavy skillet over medium-high heat. Stir in orzo and saute until lightly browned.
2. Stir in chicken stock and bring to boil. Cover. Reduce heat and simmer until orzo is tender and liquid is absorbed, about 15 - 20 minutes.
3. Mix in Parmesan cheese and basil. Season with salt and pepper. Transfer to shallow bowl. Garnish with basil sprigs.

cknmom - Thanks so much for the update. Please keep us informed. I imagine that DGD will be produced the moment that the ball starts rolling. I hope and pray that it is soon. I'm so glad to hear that the older DGD has started Kindergarten. How sweet! Stay cool out there. It HAS been hot, hasn't it?!!

Dragonfly Ranch - Thanks so much for the recipes!! I'm going to print them out and give them a try. I have everything on hand except for the mushrooms. DD hates them with a passion, but thankfully she's willing to pick them out. Consequently, we don't have them often.

I agree, lets start now, I think a watermelon daiquiry or margarita or something like that is in order. Mmmm, I have watermelon, margarita fixin's and rum....come on over and we'll fix some

We're having spaghetti sauce. I started it in the crockpot last night. Browned ground beef, onions, peppers and garlic. Frozen tomato sauce (prior leftovers), fresh chopped tomatoes, grated carrot, grated zucchini. Has been simmering all night and day. Still need to add oregano and basil. The house smells so good.

I am so glad I started this last night. It is way too hot to cook today. (had the sprinkler on for the chickens most of the afternoon) All we have to cook later is a mess o' susghetti. Got tomatoes, cukes and lettuce in the fridge for a salad.

I should put a melon in the fridge too. SO likes 'em cold.

And everything, but the beef came from the garden.

I use only fresh parmesan cheese. You could if you want but a good fresh parmesan will be better since it is the main flavoring agent.

Going with a comfort dish for dinner - homemade fish sticks made from Tilapia, tater tots and peas. Oh and of course plenty of Tarter sauce.
