Tonight it's venison tenderloin, salad, and baked potatoes!

Pancakes and home made venison sausage.


Pancakes

2 cups of scooped all-purpose flour
2 tablespoons sugar
1/2-teaspoon salt
1-tablespoon baking powder
1/2-teaspoon baking soda
2 eggs
1/2 stick butter – melted
2 tablespoons vinegar
1-cup sour cream
1-cup milk

Measure dry ingredients into a bowl and stir well to mix.
Beat the eggs with the melted butter.
In a large measuring cup, mix the vinegar, milk, and sour cream, beat into the eggs.
Add wet ingredients to dry ingredients and stir just until bell combined, let batter rest while you heat your waffle iron; it will get very thick.

Huevos Rancheros with refried beans and Spanish rice.

Huevos Rancheros
Serves 8
1 large onion - chopped
1 green bell pepper - chopped
1/4 cup vegetable oil
1/2 cup flour
1 packet taco seasoning – I like Old El Paso
1-28 ounce can diced tomatoes
1-32 ounce box chicken broth

8 flour tortillas – homemade are best

Mexican blend cheese

16 eggs – runny fried

1-30 ounce can refried beans

Saute onions and peppers in vegetable oil until they are softened, sprinkle the flour over the vegetables and cook and stir for about 3 minute. Stir in the taco seasoning packet. Add the tomatoes, stirring in well. Then stir in the chicken broth. Bring to a boil over medium heat and cook stirring often for about 30 minutes or until vegetables are cooked and sauce is gravy thick.

To assemble.......

Heat refried beans

Fry flour tortilla in butter until crispy and browned on both sides. Spread some beans over the tortilla, top with a small handful of cheese. Place 2 fried eggs on the cheese and cover with Ranchero sauce. Top with another small handful of cheese and serve immediately.

Serve with refried beans and Spanish rice.

Make the dough and divide it into 3 equal portions, roll into balls, place into bowls and cover with plastic wrap.

Heat oven to 450 degrees, and place a cookie sheet or sheet pan upside down on the lower rack. It's easier to maneuver if you remove the upper racks from the oven while you cook your pizza.

Make one pizza at a time, roll 1 dough ball out leaving the other dough balls sitting while you make the first pizza.

Place the rolled out dough on a piece of parchment paper and spread some tomato paste thinly on the dough as though you were spreading peanut butter on a piece of bread. Sprinkle with Italian seasoning and garlic powder. Top with grated Parmesan and Mozzarella cheese, put on whatever toppings you like.

I use a cookie sheet with no sides to move my pizza to the oven. Leaving the pizza on the parchment paper, use the paper to slide the pizza into the oven onto the sheet pan.

Bake for about 10 to 12 minutes or until pizza is done to your taste.

Basic Pizza Dough
Makes 3 – 12-inch pizzas

2-1/3 cups water
3 tablespoons white sugar
1-1/2 teaspoons salt
1/4-cup vegetable oil
2 whole eggs
6-1/2 cups all-purpose flour
1-tablespoon active dry yeast

Place ingredients into bread machine in order listed and select the dough cycle.
