Hey Grandpa, What's For Supper?

Another long day but I found time to cook between putting up the netting over the new chicken coop, unloading a trailer load of wood, cleaning dog pen.
Dog tired - ache all over - but I get to go back to work tomorrow to rest from my weekend.

Chicken and Dumplings
Turnip greens
Cornbread

I'm well traveled and don't mind long road trips.

Kept it easy tonight because I'm packing for a trip to Nor. Cal. later in the week.

- Grilled burgers (got them finished just as the thunder clapped in the distance)
- Oven roasted french fries (I was going to make Belgian pommes frites, but hubby wanted fewer calories)

- various fridge cleanings (again, the road trip dictates that the fridge be cleaned out).

We had a nice relaxing day, fixed some TERRIFIC raviolli (bought frozen, made a great sauce, stirred together in casserole, and topped with freshly grated parmesan and asiago cheeses, then baked for 45 min), salad, and garlic toast. There's a homemade blueberry creamcheese pie in the fridge we'll sample later, with whipped cream.

Had the corned beef dinner on Sat nite at my sister's. Made corned beef dinner for us on Sunday. Tonight will be ruben sandwiches with the leftover corned beef.

And then I don't want to look at corned beef til next year.

We had our irish dinner on Saturday. I am making meatloaf with onion soup mix in it and left over Colcannon or I might make potato "pan cakes" with the leftovers instead. Green beans and rolls.

Happy St Patricks day!

Do ya really need to ask???!!

Corned beef and the all the fixin's:
- Potatoes
- Cabbage
- Carrots
(Doing this in the pressure cooker like last year. I had good luck with that.)

Irish Soda Bread (Now where did I put that recipe from last year????)

Guinness, of course!

Sounds good.....I miss my mom making corned beef and cabage with potatoes, she doesnt live close any more. I am so sick right now its a big meatloaf and scalloped potatoes that better last a couple days.

Chicken soup made from Saturdays dinner -some sort of bread, or maybe dumplings? We had our corned beef in the form of "hash" yesterday and it was great with our fresh poached eggs! I am the only person in my house who likes sliced corned beef!

Corned beef, cabbage, potatoes rutabaga (my favorite) and homemade oatmeal bread.

We soak the corned beef for about 15 minutes, then drain (to get some of the salt out). Then we cook it in a crock pot in dark beer with onions, garlic and spices. I take out some of the
cooking liquid when it's 3/4 done and cook the veggies separate in that. We mix a little yogurt
with allot of horseradish as a sauce on the side.
Did you know you can corn turkey breast or chicken breasts? I have the recipe somewhere-haven't tried that yet.

Make biscuit dough. Roll it out very very thin. Cut it in 2 inch wide strips and then cut those in about 3 inch long pieces. Add slowly to the broth and let them come to a float before adding too many more at a time. Careful they get thick and scorch easy.
