We've had a long week...starting last week....so I'm making what I call a "Cafe Dinner"

It grilled cheese, or in this case patty melts (The grilled sandwiches of meat patty, grilled onions and cheese, on rye.) with homemade French fries, pickled fire roasted peppers, and coleslaw.

It's one of the 2 meals I think of having at a cafe, or even at the dime store, back when.

Amystours, I love manicotti! How did it come out? Here's the way I make it:

Cook manicotti noodles al dente.

Make filling by mixing ricotta with finally minced parsley, a couple of handfuls of mozzerella cheese, and some parmesan.

Make a very flavorful, and very, very thick sauce. I make the same sauce I use for pizzas.

Fill the pasta with the ricotta filling, and line a Pyrex baking dish with them.

Ladle the sauce over.

Now, this last part is personal preference, but I then top with a little more mozzerella, and grate on some more parmesan.

Bake until done, and serve as is, or with French or sour dough bread, and salad or green beans.

Tonight was:
Baked Catfish w/lemon,butter, Amandine Sauce
Baked Potato with all the trimmings- and I do mean all.
Fresh tomatoes w/diced Vidalia onions, fresh basil and olive oil.
Garlic Bread
Cold Sweet Milk
 
Yogi that sounds awesome!

Anybody have a recipe for cold mozzarella cheese and tomato salad with basil? I've seen it but I don't know what the sauce is..a vinagrette maybe?


Oh and Darlene, I would happily trade you a cold day for a hot one. We are all catching colds and need some warmth around here.

uhmmm...sounds like some good cooking has been going on....
I didn't cook supper tonight, a church member called and took us out to pizza....hmmm, seem to be spoiling us for some reason

I plan to make one pan pork chops in the toaster oven for supper tomorrow, will have my greens (I like to fry them up with bacon grease and smoked hamhocks, or ham if I have it)
cornbread muffins, creamed potatoes, garden fresh mators, fresh fried squash, and a plate of fresh raw veggies: cucumbers, bread & butter pickles...
(I've got some fresh cucumbers soaking in saltwater & vinegar now

Well, things change without a moments notice. My Sis was in the nursing home one week and we just got a call that she is being transported by ambulance to the hospital here which is an hour ride for her. Turns out she now has double phneumonia (spelling). She has less than 20% lung capacity and heart efficiency. Poor thing is having a tough time of it.

If you can back up on this post a couple of days and look for the pork chop recipe that BamaChicken posted to me it might be something you want to try. I am. Sure sounds good.​
 
Last night was macaroni salad (out of a box - I cheated). DH fixed shrimp on top of the stove. I have no idea what all he did but I know he sauted them in olive oil with some slap yo momma and garlic. He threw in some fresh herbs. I was so busy going "ummm, ohhhhh, these are great", that I forgot to ask him what exactly he did. LOL
He is now officially in charge of shrimp.
 
Yogi, I'm sorry to hear about your sister's declining health. I will be praying for her.


We have been having leftovers. Somehow it seems that from time to time I open the fridge and see lots of leftovers. Tonight's the last of them. Tri-tip sliced and simmered in homemade bbq sauce that I made for chicken. Garlic, cr. cheese mashed potatoes with cheddar cheese chunks and red onion slices, corn with dill and butter. DGD is going to make s'more bars for dessert.
