Tonight we are having herbed chicken strips, au gratin potatoes, and asparagus, with strawberry shortcake later on. We are just having a bumper crop from these transplanted wild strawberries!
But I'm also going to start tomorrow's dinner, as it's ds's birthday, and he wants pizza. I think I'll slice the toppings, grate the cheese, and make the pizza sauce tonight, since it's supposed to be pretty warm tomorrow. Then all I'll need do, aside from assemble, is make the dough, but that's a snap in the food processor!

But also, have you ever cut it up and cooked it in a pan with eggs, or used it anywhere you might use bacon? I've cooked it in a pan until getting crispy, and used it on and in all sorts of things, when I've had extra!
Redfeathers, yes, it's usually a vinaigrette. At least that's how I've had it. Vinegar causes a reaction from mozzerella. It kind of "firms it up." Sometime take 2 pieces. Eat one plain, and then drizzle one with Italian dressing, and note the texture difference. That's why, when I make a dinner salad with cheese, grilled chicken etc. in it, I put the cheese at the top, so that when I drizzle on the dressing, I'm sure that all the cheese gets some on it. Often the topping to what you're talking about is based in balsamic, but you can do whatever you like. I have a roasted red bell pepper vinaigrette that I really like.
