spinach-zucchini-shallot quiche with a few chopped green onions on top garnish.


It's easy,
1 cup cream or whole milk
2 or three eggs
frozen pie crust
two handfulls spinach(shredded or frozen DRAINED)
good handful of shredded cheese (you pick)
1 medium zucchini (chopped)
1 or 2 tblsp fine chopped shallots
pinch of grated nutmeg


whisk eggs, nutmeg, cream, set aside
heat oven to 350 or so
add spinach, cheese, cooked zucchini in layers to pie crust.
slowly pour egg mixture into pie crust DO NOT OVERFILL!
the eggs will expand and run all over if you fill to high!

Bake at 350 for 45 to 50 mins or until center is just setup and slightly browned on top. (remember the center will be loose like watery pudding. )
take it out and let it set for 5 to 10 min to cool and fully setup.

When I cook this for my clients I saute a tablespoon or two fine chopped red bell pepper with the zucchini for color and some flavor. (My wife hates bell pepper)

That only makes one pie. It's just me and my wife so...two?

I usually cut it in 1/4 . Me and the DW each eat 1/4 and use the other two 1/4s for lunch at work the next day.
So I guess four as a main dish with a few sides like asparagus and mashed potatoes and maybe eight as a side dish or appetiser. depends on how you cut it an how hungry you are.

It's real easy, just use things you like to eat. Heck make a western omlet out of it!

If you need to feed mpre more just keep in mind you'll need one cup creme (or milk) and two eggs for each 9 inch pie----that's the key.
Add what ever you want for flavor....I've even had just plain custard (that's what it really is) and crust!

Now, I do vary according to what I have handy...but this is my basic. Mine would be classified as a medium, I get heartburn easy...you can add more Red Peppers, some Slap yo Mamma & it will get hot mighty fast. We do like our chili! (It was good too!)
We had that with the cornbread topped off with iced sweet tea.
My we had some bad weather that came thru, the ladies from the Doc. office called in a panic (they go to our church) said they saw a funnel cloud our direction! Could have told them that, we had nickel sized hail, Our B-B-Q lid, 2 lifevest, several buckets, an empty plastic barrel, and some sheet iron is a layin in the cottonfield across the road! We are fine, it surely did scare me though...last year was a traumatic experience for us. I don't think it touched the ground, at least not close to us...but I heard it.

Thank you, Parsonswife. I'm sorry I didn't answer you sooner, but my computer ended up in the shop, unexpectedly, on Wednesday. I've been chomping at the bit since. It may have to go back Monday, we'll see.

Eegads! I'm glad that you guys are okay!!! That would scare me, too!

I wouldn't make mine really spicy, either. It sounds delicious, thank you very much!

I've had way too much time to cook! lol!

Let's put it this way, on Thursday morning, when my son got up for work at 6, we all sat down to scratch biscuits and butter (Yes, we use butter and olive oil, not margarine.), chicken strips, and freshly squeezed orange juice.

For the sake of our waistlines my computer had to come home!

I'm planning homemade pizza for Sunday. I have everything I need to make the crust and to top them. When the computer was out, I made the sauce, so I'm set.

We had leftover Summer Chicken Salad - everyone's favorite.

1lb small pasta, cooked, rinsed, and cooled
3 C cooked chicken or turkey, cut into bite sized pieces
2 C green grapes, cut in half
1 20oz can pineapple tidbits, drained
1 8oz can crushed pineapple
1/2 C slivered almonds
1 C diced celery (dh hates raw celery, so I leave it out)
1 8oz container cool whip
1 C mayonnaise
1 tsp salt

Mix everything together and refrigerate until you're ready to eat. Serves 10-15.

Hi Ya'll! I've been gone almost all week...got back just a few minutes ago...and here I am...I think that means...I'm addicted!
I was taken out to supper by my in-laws, they met us at a Mexican rest.
So, I begin the task of cooking for my family again in the mornin.
My mother spoilt me rotten this week! I know ya'll don't want to hear what I had breakfast, dinner, & supper! Oh, & the desserts!
Last night was blackberry cobbler, the night before was strawberry shortcake (served with her homemade crust-not cakes)....
 
Sounds fun, Parsons. We all need someone to treat us from time to time!

It's stinkin' hot here so dinner was taco salad bar. I seasoned some chicken breasts and cooked them in the crockpot, then shredded them. Everyone got a plate of salad and got to put their own ingredients on top. . . chicken, onion, fresh cilantro, corn, kidney beans, cheese, home made salsa, tortilla chips. It hit the spot on this warm night!
 
We're having stir fry tonight. It's a spring version with chicken, small strips of red bell pepper, asparagus cut on the extreme bias, onions, lots of slices of fresh ginger root, and whatever other vegetables look good. Served with rice.

I have a tip for anyone who likes the flavor of fresh ginger, as I do. If you will have leftovers, scoop out the ginger slices from the main meal before you serve it, and put them into the container you'll put the leftovers in.

They will just be discarded anyway, but they impart more flavor to the leftovers as they sit in the ice box. They've already done their job for dinner, so let them make your leftovers even tastier!

Parsonswife, I'm so thrilled for you, that sounds wonderful! Actually I would be a captive audience to any part of your eating week that you shared, but, oh, the desserts do sound lucious! You deserved every minute of you dm's spoiling!

Backyard Buddies, I heard that it was getting hot down there. It was here for a cpl of weeks, but we've had a reprieve. I'm planning to make all the dishes, this coming month, that I know I'll not heat the house for, come true hot weather. The taco salad bar sounds wonderful!
