spinach-zucchini-shallot quiche with a few chopped green onions on top garnish.
It's easy,
1 cup cream or whole milk
2 or three eggs
frozen pie crust
two handfulls spinach(shredded or frozen DRAINED)
good handful of shredded cheese (you pick)
1 medium zucchini (chopped)
1 or 2 tblsp fine chopped shallots
pinch of grated nutmeg
whisk eggs, nutmeg, cream, set aside
heat oven to 350 or so
add spinach, cheese, cooked zucchini in layers to pie crust.
slowly pour egg mixture into pie crust DO NOT OVERFILL!
the eggs will expand and run all over if you fill to high!
Bake at 350 for 45 to 50 mins or until center is just setup and slightly browned on top. (remember the center will be loose like watery pudding. )
take it out and let it set for 5 to 10 min to cool and fully setup.
When I cook this for my clients I saute a tablespoon or two fine chopped red bell pepper with the zucchini for color and some flavor. (My wife hates bell pepper)
