Their Other Mother, those sound good! I love sandwiches, and while I can't have them anymore, I used to really like Doritos! Someday look at a usual Thursday for me...baked potato night. Put potato in oven. Serve. Let everyone put on their own toppings. It helps on busy Thursdays, and I don't have to do anything to get it on the table. Alright, a salad, but that's it! Save a cupcake for me!

Redfeathers, They are quite easy. And if you will be short on time, you can make the patty and onions ahead of time, the day before. Then just layer, and brown! There is one thing about doing it ahead, and that's that the meat and onions are cold. You can set them out for a little while as you get things ready, or heat them in a microwave, I'd assume.

We had spaghetti and homemade sauce last night.
We actually had not only hail yesterday, but also SNOW AND RAIN!!! We got about 1/2" of snow. We are expecting thunder showers all weekend. There goes bbqing like I had planned:barnie

Tonight is something with the chicken I cooked in the crockpot yesterday, haven't decide what yet.

Tomorrow will be keilbasa, corn and probably rice, as I only have two potatoes in the house.

Sorry Tutter, kids ate all the cupcakes - but I made peach dumplings tonight. So the guilt got me and I'm cooking tonight:
Chuck Roast, mashed potatos, gravy, don't have any carrots so what vegitable shoud I use?
 
Being Sunday, the day I try a little harder, I've decided to have:

Pimiento cream cheese and olive filled celery, and V-8 before dinner, to keep everyone from chewing on the furniture. The chicken smells good roasting, so I have to give them something to gnaw on!

Dessert: Peach Cobbler

To make the chicken I cut fresh sprigs of rosemary, and put it under the skin on both sides. As long as we eat free ranging birds, they don't seem to have the layer of fat that store birds do, so I don't mind leaving the skin on for meals like this. When they say the skin is bad for you, I think they have to mean the fat layer. The epidermis itself should be fine, and is lovely when brown and crunchy.

That sounds good! Any vegetable would go with that, IMO. Do you have green beans? Peas? Brussel sprouts? Beets?

I made a chicken pot pie, with homemeade gravy and biscuit topping.

Thanks bama for the biscuit pictures. I made 4" baking soda biscuits yesterday morning and put butter, bacon fried egg and cheddar cheese on them. They were delicious!!

This morning will be broiled biscuits and honey. Tonight leftover spaghetti. Still raining and cold here.

We will be having:

Grilled BBQ baby back ribs
Homemade (quick version using canned beans) baked beans
Buttered corn on the cob
Redhook Longhammer IPA (for the adults) and milk for the kids.

Dessert - "Apricot Pudding" a recipe that has been in my family for decades. Not for those on a diet.

2 - 15 oz. cans of apricot halves (undrained)
1/2 cup sugar
1 box yellow cake mix (unprepared)
1 cup of butter - melted.

Drain apricot syrup into a glass measuring cup or a pan. Add 1/2 cup of sugar. Bring to a boil in microwave or on stove.

Arrange apricots in the bottom of a 9" X 13" glass container. Pour syrup over apricots.

Sprinkle dry cake mix evenly over the apricots.

Top with melted butter.

Bake at 350 degrees until top is golden brown - about 25 - 30 minutes.

Serve warm or cold with ice cream, cream, or whipped cream. We're having ours warm and with ice cream.

Well, we had a crowd this evening to celebrate 2 sons graduation from college. Youngest son graduated Summa Cum Laude with a Masters Degree in Business Adm. and Accounting. Student of the Year Masters Program. Middle son graduated from Air conditioning and Refridgeration school and has his own business. He was also student of the year in his course and recieved a nice award. DIL B'day.
We had steak and chicken Shiskibobs, Rice, Potatoe salad made with fresh new potatoes, Grilled hamburger, Hotdogs and steak. Lettuce and fresh sliced tomatoes, Baked beans, Chips and Fresh Fruit salad. Ice Cream Cake Birthday and Congrats cake. Lots of swimming in the pool and fun and Younguns. Did I say, Iced tea, Coffee and Soda.

Congratulations to your two sons for their wonderful achievements! You must be so proud and they are to be commended for their hard work and success! Happy bday to your DIL as well! Sounds like a lovely celebration dinner!
 
I had to decide between a barbeque, and continuing with our projects; I chose the projects. So we're just having a taco salad, with chocolate meringue pie.

Backyard Buddies, I wonder if that's anything like the flavor of my peach upside down cake, other than the fact that I use light olive oil, instead of butter, and make the batter myself?

Flour, 2 cups
Sugar, 2 cups
Eggs, 2
Olive Oil, ½ cup
Baking Powder, ½ teaspoon
Vanilla, 1 teaspoon
Baking Soda, 1 teaspoon
Salt, 1 teaspoon
Large Can of Peaches in Heavy Syrup
1 ½ cups of H20. All or part can be the syrup from the peaches.

Preheat oven to 350 degrees, and oil a 9” x 13” Pyrex pan.

Mix everything but the fruit in a bowl until smooth.

Make a layer of fruit at the bottom of the pan.

Pour batter carefully over the fruit.

Bake for about 45 minutes, until a tester comes out clean.

All I know is that it's good, as I'm sure yours is. I will have to try yours, thank you!

Buster, I don't believe I've made ham pizza before, but I do enjoy homemade pizze! It *is* good, and filling! Did you make sure you had leftovers....for breakfast?
