Hey Grandpa, What's For Supper?

Grilled porkchops, oven roasted red potatoes drizzled with olive oil, garlic and rosemary, garden tomatoes, and corn on the cob. Dessert was peach cobbler made with fresh WV panhandle peaches and vanilla ice cream!
 
We grilled OUR OWN CHICKENS!

I made some cheesy rice, and grilled some okra alongside the chickens. The birds were spatchcocked and grilled whole, and were DELICIOUS. I'm picking the meat to use in lunches this week now.
 
Yep, tonite a big beef chuck tender on the grill, with crunchy baked tatoes and zuchinni and green peppers laying beside my big steak on the grill.

Don't forget the cocktail that is soooo goooody!

Well, tonite I am baking some chicken breast to make a poppy seed chicken casserole and some fresh green beans stir fried. The long skinny kind. I'm a bit tired after cooking an having company all even yesterday and Big Church day too. I may not get anything else thrown to gether. Wish I had some of that leftover Spagetti.
 
Poppy seed Chicken casserole
3 to 4 chicken breast baked or boiled
1 3/4 cups sour cream
1 can cream of mushroom soup
1 sleeve of Ritz crackers
1/2 stick butter
1 tablespoon Poppy Seed
Take chicken off bone and cut into small pieces. you can use boneless skinless if you want to.
Place in a medium glass oblong pan
mix sourcream and soup throughly together and spread evenly over chicken.
Crush the crackers, mix poppy seed in crackers. Melt butter and stir into crackers. Top the casserole with this mixture and bake for 30 min on 350 Yum
Very good with fresh cranberry sauce.

Well... I wonder what I will cook tonight! Usually by now I know. I am going to bake some bread soon as I get off here. Anyone have a great idea to go with fresh bread?

What did ya come up with chickenchick? For future decision making, fresh bread always goes nicely with pasta, though that would depend on the type of bread you made. One of my summer favorites is fresh garden veggies over pasta. Another favorite with fresh bread is a nice salad supper. Either of those would go nicely with your goal of eating healthier.

Tonight I'm making homemade tacos (sadly, I didn't have chorizo Aneesasmuse) and homemade refried beans.
 
Thank you Backyard Buddies. I really like the salad supper idea. I read it a little late though. So I will keep that in mind for tomorrow or thursday. I started a pot of homemade potato soup. It didn't get above 65 today. It has been in the 90s so it almost feels cold! So it seemed like a soup day. Tacos do sound good.

Stuffed chicken breasts, mashed potatoes and green beans from my mom's garden.

The potatoes are fresh from a local person who's selling produce this year. We traded a few dozen eggs for a bunch of fresh veggies
