Entry 2: Brown Sugar Buttermilk pie

I usually do a Scandinavian themed NYE dinner, but went with a Southern theme this time instead, with collards and black-eyed peas for prosperity. A buttermilk pie seemed like the perfect capper for the meal!
 
Entry #3 - Butterbeer
The holidays always involve a Harry Potter movie marathon for us, and I always saw the butterbeer and wanted some myself! Well we found a recipe and tried it this year, and it was an all around hit. If you love cream soda, this is one step up. It is non-alcoholic and very sweet and yummy.
For anyone interested here is the recipe. We could not find caramel extract anywhere, so we used some caramel syrup like people put in coffee and other drinks and I used 3x the amount listed for the caramel extract.
(Didn’t have any cool mugs this year but we will next year!)

Entry #1: Japanese Cotton Cheesecake
The yummy cake that reminds you of a hybrid between a cheesecake and a spongecake. Not too sweet, awesome jiggly texture. It took me years to feel brave enough with my baking skills to first make this, and I will make it once a year now.

Japanese wiggle cakes are incredible... saw one made in the Great British Bake Off TV series!
