How do I choose breed?

Welcome! Brahmas tend to be very nice gentle birds, and beautiful. Not the best layers, but lovely birds. Some roosters grow up and turn into human aggressive jerks, and can be dangerous, especially for small people. Make sure that he moves out of your way, doesn't 'dance' for you, and ideally, avoids you and pays attention to his flock instead.
If he's been raised as a solitary cockerel, it's really hard to predict his behavior as he matures. Just be aware, and be careful.

Thank you! He was actually raised with 4 hens. He has only been with us for about 2 weeks. He will kind of follow me and the kids around the property while still keeping his distance. It used to be very easy to sneak up on him to pick him up but he now runs away and is rather hard to catch

Stay with your Polish rooster because he is likely to not get mean. I would never have a Brama rooster again. They are HUGE and mine got very mean before we took him out. But the hens are lovely and very easy to have around. They also make wonderful brood hens if you decide to let them raise chicks.

Here they are!!
