How many eggs should I expect a week?

No they are confined to the coop. (Besides the times when I let them out)
I have 2 fake eggs and I put them In the nesting boxes.

Yes, they 'practice'.
It also sounds much like the 'alarm' call.

Don't do that too much, you might turn her off of them.

The only time I would suggest you try putting them in a box is if they're already laying and not using the boxes. If that ends up being the case, then it can work to physical show them where to lay when they're about to lay.

Hopefully I didnt just prolong the whole process. Today she was squatting at pretty much everything

Should be fine. Just wait to see what she does, and then if there are problems (i.e. not using nest), solve them after they arise.
