I got about a half pound of fat from the gizzards. I should have added some to the roaster to render. Alternative would be butter. Hind sight is always 20/20. argmaking sausage gravy and biscuits for dinner tonight jimmy dean sausage does not have that much fat to make a roux usually add bacon fat for my roux

Thank you. What works best after the electric roaster is the roasting pan that grandma used to use. Remember that old black speckled pan with a lid? Yea that is best, by my RB doesn't fit in one.@rjohns39
My attempt would have ended at the electric roaster....I would have found a way to short it out, take the rest of the house with it, and then set everything on fire.
I am in awe and envious at the same time of your cooking skills (and animal husbandry and butchery).
Hats off to you!
I just didn't realize how lean these birds were. When's the last time you cooked a turkey and only got a tablespoon of fat?duh me yes butter works great
Well, if you find yourself roasting a 25 week old cockerel that pan is your savior. It was designed for our kind of birds.Actually, that's one thing I can say I did right. I collected those from various grandmothers and great aunts passing....I have about 6 - all different sizes. Hubby was very happy with my "collection". Yes...they work great and don't make em like that anymore! I also have an old nut chopper and flour sifter that can't be beat by new ones.
