It's 5 o'clock somewhere! And I believe I will drink to that!

I work half days on Friday, so IF I have the gumption, we celebrate. I eat leftovers all week at work. And, pardon my modesty, DAMN! I'm a good cook. Now that it's just the 2 of us, I'm still cooking for 5.

Changed the menu and losing weight. And, I might add, looking good doing it! Notice low carb diet, above. The low carb is rough when you like homemade bread, pizza and kolaches.
Good for you, the low carbs work, but yes they are rough to fore go. DH lost 30 pounds on this diet and no longer needs to take blood pressure meds! It helps if you are a good cook. We have had some really great meals!
 
We were an empty nest for many years and loved it. Nest is no longer empty... Can go either way on a given day--but at least the portion control is no longer a problem. I just offered a lasagna recipe to another BYCer, I can't figure out how to make it small.
It usually freezes well, freeze some for another meal or two. Nice to have on a hectic day.
 
I don't know how to cook for only 2 or 4?
No clue.
It was really fun to cook/manage a meal for 1000. If memory serves, we had 23 stoves in play (think dorm room), a custom made grill and a dozen or more grills. I really wondered where Jerry got that ham from (took a custom grill to cook it) til the investigators showed up looking for the commander's ham. Oops, I know nothing!

DW did well on Atkins but she is really committed to her carbs. I'm kind of a meat guy and way less interested in carbs--but found hauling water and feed to the birds to = massive weight loss. I've been riding a desk for more than 20 years. Exercise (kiki that doesn't come from a vid) is good.

It usually freezes well, freeze some for another meal or two. Nice to have on a hectic day.

I apologized for not downsizing it, and told her it freezes good. This is kind of crazy. I can do math. I cut a recipe down to 2 people, taste and its not right. Adjust, adjust, adjust and when up to a meal for 6 or 8, it tastes just right. ARG:th

Soon to be 65 with a middle tire and 5'4"...guess I'll fit in somewhere.....

Butchered chickens and canned the meat and made broth to can later this evening.
Need to go checks cows...be back in 5 pages....

Somethings that are related to taste just can't be cut down by dividing everything by 2 or whatever! It's not uncommon for me to cook two or three meals a week and alternate when we eat them, so having the same thing two or three nights a week. Also DH brings leftovers for lunch, so he has a few things to pick from and can mix and match.

NanaKat, you already fit in, so interesting the more we chat the more I realize how alike many of us are. Maybe WE are the american norm!!! :highfive: :yesss: And of course we are including potato chip.
 
I like to make one thing and turn it into something else. Like hotdogs one night, then and beans, tomatoes, onions to the leftover chili make some cornbread to go with it. Have that chili stretch for days.
We do that too, add something to turn some leftovers into a full meal!! Hate to see waste, even though leftovers can always go to hens.
