Those of us that need that pain killer will have to look at other methods I have
done the otc methods I know better even lidocane is unknown if you use it 25 or 30 time a day they say that our state looks bad on you for using pot but what choice is there I have not tried it again as it make me giggle and gives me the munchies but will it relieve the pain
 

I appreciate this!!! I don't think I have ever heard of "dressing a turkey"...and Chef will just think I'm being my usual insane self if I ask him. I emailed the all knowing Mom and she said "dressing" a Turkey is when you put all the fancy stuff on it - like those paper feet and other stuff (I have never seen "other stuff" and I'm thinking of when you do the anise stars and such to a ham...however....) - but I'm thinking she means festive designs done with veggies...like pimentos and something else to represent holly leaves, and when you tie the bird all together to keep the stuffing in. Stuffing is the bread filling, sautéed veggies, giblets, etc. inside. :drool

:lol: I think your mom may be wrong about dressing the turkey, ... I would like to know what Chef has to say. Would you ask him for me?
 
Ok, I'm pretty simple. I make my own turkey/chicken rub. I stuff the bird with a mix of herbs, aromatics and citrus that get's tossed when the bird is done. Bird gets stuffed, then trussed then olive oil rub down and then rub. Then into the pan and into the oven. If heritage, different approach slightly. I think I can take pic of my pdf file and post it here if you're interested.

I bought a 20 lb turkey today.
I'm not sure yet what clothes he is going to be wearing. :gig

For dressing... I use two onions, one bunch of celery, a dozen cloves of garlic all sauted in butter and then add mushrooms. Poultry seasoning, sage, salt and pepper. When really rich, I'll take it off the fire. When cool enough to handle I'll add it to a couple loaves of diced bred that's been setting out overnight. I'll add stock to get to the sticky desired consistency. Then bake at 350 for 45 minutes or so, until top browned.
