I use penzy's too. I like to buy their bulk spices and store them in the pantry. Their vanilla is just amazing and even though I use Penzy's cinnamon mix most, I still haven't figured out which one I like best. It really depends on the recipe.

He is saying to go ahead and go for it though (the expensive brine) but that you may wish to taste test it before sticking the bird in just to make sure you can stomach it (may be too bitter/salty/spicey). He's a spice guy. In fact...found a box delivered last night for him that is Penzy's Spices. God knows what he ordered...or better yet....where he's going to stick it! We have two shelves in the pantry all spices and cooking stuff and two full cabinets loaded with spices. Luckily I have not had an avalanche of spices fall on me when I go looking for something.

Ok, a little food science lesson on brine. Alton brown has a really good video of it.
The salt in the brine draws moisture out of the bird, the bird then draws the liquid in the brine back into the cells. The salt just kind-of hangs out outside the bird (as long as its not left there too long). My brine has lots of citrus, aka citric acid which will break down tissue (aka make meat tender), the aromatics and herbs and spices are for flavor. As the bird draws them in, it flavors the meat better than injection processes.
What's funny, is I don't brine my heritage birds as they come full of flavor and if cooked right they are tender. Store bought birds, I brine.
I have a "garleek" that grows cloves as big or bigger than golf balls. Then red necked garlic, elephant garlic and "community" garlic. Each has its own look and flavor.And guess what I've been cleaning up a spot out in my garden area so I can plant some! Double Woot!
Not at my house! This year hubby and I are going to his sister's for Thanksgiving. Our girls will be with hubby's families.But it's in ADDITION to Thanksgiving...that's what has me confused. I get having one or the other (we did that a few years ago)...but this is in addition. "FriendsGiving Eve"...done before Thanksgiving.
Hubby has 4 different forms or arthritis and now takes Hysingla 30. It is a long acting hydrocodone that he takes one time in the morning.yup he telling me try this...... I was taking enough to be lethal on them this why I have pain killers now......
