I don't like my eggs :( ???

We called them soppin' eggs when I was a kid. I guess because we would sop them with biscuits. I think I was in my twenties before I ever heard the term over easy. LOL My mamaw (r.i.p.) would cook them in Crisco shortening. (Good 'n' healthy for you!)

To make them just right, I fry them (usually in a a mixture of olive oil and real butter) until they are just firm enough to get a spatula under them. Then flip them. Cook for 20-25 seconds on the other side & remove them from the heat.

Steven loves "eggs in a hole", you toast a piece of bread, make a hole in the middle and put it in the frying pan. Break an egg in the hole and fry and usual, be careful flipping it over. He says fresh eggs are so much better, the yolks stand up and don't run under the bread and they taste great.
The teenager thumbs up for fresh eggs.

I cut fresh bread in thick slices, butter both sides, cut out a hole in the middle, slide it into a fry pan and crack an egg into the hole. The butter toastes and is like golden heaven as the bread grills and the cooks. One slow flip to cook the other side golden brown. My kids LOVE it.

The USDA allows store-bought eggs to be sold up to 60 days after they are laid from what I read...and there certainly is a difference in the taste between the two that may take "some getting used to" in the beginning.

When I used to buy storebought eggs, I was so afraid of getting salmonella that you'd hear about all the time, so I used to cook the heck out of em. Dried-up, hard eggs -- not so delicious. Now that I have fresh eggs, I love love love that I can leave them runny or soft as much as I want, or make mousse, etc with raw eggs and I have none of that fear anymore. I know this is not the greatest thing, but that's how I think of it now -- that storebought eggs are more likely to give you salmonella than your own backyard eggs!
 
I have never been a huge fan of eggs anyway and when I first got my home grown eggs I really didn't like them at all...as the OP said, "too eggy". However, I didn't give up on them and now I LOVE eggs....MY eggs!!!! My 7 y/o is the world's most picky eater. He actually had 6 (yup, 6) scrambled eggs for breakfast recently! These are full sized chickens, so full sized eggs and a 7 y/o child who JUST hit 40 pounds!!!! He likes to pick who laid the eggs (I want 2 of Miranda's, one of Strawberry's, etc.).
 
When I first started getting my home grown eggs, they were just too strong, so I mixed 1 to 1 with store bought, then got less as time went on. I still mix every now and then but it depends on what I am cooking. Try it.
