I know chickens can eat raw salmon but......

what about a bony carcass? When I pull the spine out of the partially frozen salmon there is quite a bit of meat
left on it. I scraped it off the bones last week and the chickens LOVED the raw meat, can I leave it on
the bones and let them work it off?
Can they choke on the bones?

Chickens like fish and of course they can have issues eating tiny fishbones. Take them out.
Do not feed chickens any kind of meat though as they will get a taste for it and peck each other.

I caught a mountain white fish once in the front yard. Decided I'd throw the scraps to my hens to see how they would like it as they'd never had raw fish before. I tossed the head and everybody FROZE! There was a whole lot of precaution to approach the head, even my geese were spooked :lau I think the eyeballs were confusing for them. Eventually the fish head was pecked bare.

Feeding chickens meat doesn't make them peck each other. Mine get meat all the time and they have yet to start eying each others drumsticks

In some countries it’s actually Illegal, but Im not on here to argue.

I’m all for not arguing - I’m just also against posting false information online. :D

Feeding food scraps, including meat, IS illegal in some places...for reasons that have nothing to do with chickens looking at their neighbors and seeing roast chicken dinner, cartoon-style,
