Zucchini bread and cookies are amazing! I am begging my wife to make some.
FYI - shred excess Zucchini and freeze. Can be thawed for baking all winter.

I cube up and blanch before freezing. I need to get into the shredding business, though. I have a mandolin, but I make sure to have 911 on speed dial every time I get it out.
