That's why cows are good up north where it freezes. You butcher it, pack it in snow, instant freezer for the winter. Chop off a chunk with an axe when you need it, or take your time smoking it or jerking it or fermenting it piece by piece.
Or it's a good reason to live in larger groups.
The butcher kills one cow, and each family gets enough for the day, and a day or two later the butcher kills another one.
Restaurants would help, too: one fire, one big animal, lots of meals for lots of people.
