I must get hubby to bake bread!! Buster you have a recipe for this Farmer's casserole? Sounds like something DH could also do on his nights he cooks!

Well, it's not mine, I got it out of the Better Homes and Garden's cookbook. I'm leaving here in a few minutes but I'll see if I can post it later when I get back. I made it just how the recipe said the first time, but after tasting it (which was very good by the way) I realized I could substitute all kinds of things into it for variation. I want to make it more because it will help me use the eggs we've been accumulating.

Here you go- I Googled for it and found one nearly identical and just changed the parts I needed to to make it fit what I made last night:

* 3 cups frozen hash brown potatoes
* 3/4 cup shredded pepperjack cheese (I just used the Colby jack that was on hand)
* 1 cup cooked ham, diced
* 1/4 cup chopped green onions
* 4 eggs, beaten
* 1 1/2 cup milk
* 1/8 teaspoon ground black pepper
* 1/8 teaspoon salt

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish.
2. Arrange hash brown potatoes evenly in the bottom of the prepared dish. Sprinkle with pepperjack cheese, ham, and green onions.
3. In a medium bowl, mix the eggs, evaporated milk, pepper, and salt. Pour the egg mixture over the potato mixture in the dish. The dish may be covered and refrigerated at this point for several hours or overnight.
4. Bake for 40 to 45 minutes (or 55 to 60 minutes if made ahead and chilled) in the preheated oven, or until a knife inserted in the center comes out clean. Let stand 5 minutes before serving.

After tasting this, I have determined that the ham could easily be substituted for hamburger or chicken and that mushrooms could be added as well. Different cheeses would be fun to try too. Different kinds of onions could be substituted and you could put green peppers in if so desired as well. I am going to try lots of stuff with this.
