Is this a weasel?

Opossum can be eaten and if cooked properly tastes like chicken. I like mine on the spicy side so I use it in Gumbo. They are actually pretty clean animals and they breed prolifically and they find their own food. Growing up in the swamps of north Florida we had to make do with what was there.
 
I'm usually game to try most anything and opposum is something I would sample....as long as someone else killed, cleaned, prepared, and cooked it for me. No way could I dress out one of those things and then cook and eat it.

People talk alot of smack about eating raccoons, opposum and the like but like daddy always said- "you can't beat a meal that comes with a free hat!"
 
and in china they eat monkey, dogs, cats and snakes...

I would eat possom if someone else cooked it.Then if I liked it, I'd clean/cook the next one. I've eaten coon twice, once baked, the other time pressured/fried. The baked wasn't so good....rather strong-tasting and greasy. The two my wife and SIL cooked were pressured, then de-boned and fried. Rather tasty, it was. I know folks who have eaten armadillo, and while I would try it (I think), every time I kill one in the yard, I think they are one of the nastiest looking critters in existence.

they eat snakes in the US as well. Rattlesnake is VERY good. So is gator. My friend was supposed to bring me some gator-tail boudain but he kept it all for himself :(

and we won't even get into what "poor" people eat. Think "Beverly Hillbillies" lol One of my mom's favorite foods is squirrel brains and gravy. Makes me gag just to type it. I also think that liver is one of the grossest things on the planet. Offal in general actually, but it is a high priced dish in a lot of upscale restaurants. *shrug* as long as you aren't making me eat it....

Racoon is a bit greasy but it works out good if you boil and drain, then cook it however you like. Bear is pretty greasy too, but if they are cold weather bears you can render the fat and it makes very tasty pemmican. Best meat I have ever ate was elk fresh. It was sweet, tender and oh so good. Might have had something to do with me being wore out from humping all over that dadgum mountain for a week before we got him. Gator is ok but I am not a fan, same with snake. Just not worth all the work to me. Turtle, well I could but my wife would probably kill me in my sleep as they are untouchables to her. She made me stop in the middle of I-95 to move a turtle out of the travel lane!
