So peeps who've been through this rodeo before, anything particular I should prepare for a wildfire evacuation prep kit?

I like this list. Especially the part about taking photo inventory.

If you have a fire-proof box or safe, inventory the contents, take photos, and make a backup of those photos. Put things in it you can't take but are important. If you don't have one, consider getting one. Even if this blows over (pun intended) it's never a bad idea to have a fireproof safe in the house.

If you're gonna try to take the girls, stuff them in a dog crate or do the hurricane burrito things with them. otherwise just throw the coop door open and let them fend for themselves. I know that sounds cruel, but if you have to GO! NOW! it's better than roasting them in a locked coop.

Have 3-4 shelters in mind to evacuate TO. The closest ones may fill up, so have options.

Pack 4L water per day per person in your car. at least 3 days worth.

Don't forget snacks.
