I picked some wild summer grapes, did the juice bit, sat overnight to let the tartaric acid settle out...and went to do the pectin test. What does 'be able to pick up with a fork' mean? I had threads of jelled stuff, but not a chunk. Last time I made wild grape jelly I did not realized how much pectin the grapes had so I added sure jel and ended up with grape flavored super balls. So now I am hovering over this stuff not wanting to waste my efforts or ingredients and I feel really 'jelly stupid'. like 'shell shocked' but with pectin. please help.
