Look, he can still eat what he likes, just get rid of the waste food. Anything processed to death is not going to do him any good (ie. cool whip); it is portion control and eating real foods that are the main things to work on. Go back to eating foods the way they were meant to be eaten. Real potatoes, whole grains, real cream, brown rice (NO INSTANT), those awesome free range eggs...... and of course get him out doing some exercise when he feels up to it. Unsaturated fats are what you need to look for. Olive oil is good, canola oil for baking, I think grapeseed oil is in there too.... Just cutting the processed food from his diet should cause some major changes in his eating habits.

Also; reading labels is a good idea, but do not be fooled. If a label states 0 trans fats it may still contain them. The FDA requires them to list the trans fats as soon as they have a level of 1 per serving.

Wow, the drama, Mama! Deb, so glad Ken is doing well and is home. My MIL actually has a stent at the point where that artery splits, so I understand the nail biting you've been doing. Luckily cardiology has come a long way, and Ken was seen soon enough to make a difference. If you haven't found it yet, the Moosewood series of cookbooks have awesome vegetarian recipes (even DD and DH will request some special ones!) You're both troopers and you're lucky to have each other. Good thoughts, healing energy and hugs to both of you.

Ken does not like pork or chicken. We do chicken a couple times a month because he knows I like it. The fish tonight satisfied him, so I need to go to a market that has more variety. He hates ALL veggies except corn.... which is a diabetics nightmare, but not his, so he can have it. The salt substitute is good!!! I bought 20 yogurts today too. This is different......
 
Mrs. Dash in all kinds of varieties. It even makes carrots taste pretty good!

Perhaps you could look into The Sneaky Chef or Deceptively Delicious for recipes that hide veggies in otherwise inconspicuous foods.

Will the man eat a stir fry?

No Asian food, chicken, or pork.

Pfft. I'm not easily stumped when it comes to food (my biggest hobby), but you've almost got me.

Wanna recipe for awesome whole grain bread? It almost has a cake texture...

There's a ton of stuff one can do with fish though. I love broiled mild fish like catfish or snapper. Toss some small red 'taters in olive oil and season them mildly, then roast at 400. That's good eatin'.

Crust fish with breadcrumbs and chopped pecans and roast it elevated on a baking rack and it will feel fried.

I know what it's like to NOT like food...I have the tastes of a 10 year old.

If he's cooperative, you'll settle into stuff that works. If one can eat the same few things for a long time, one can eat a different set of same few things as well.
