I hear ya about the meat and potatoes man. My hubby is as well. Here's a good recipe.
Chicken Cacciatore Crock pot style
6 boneless skinless chicken breasts
flour to dust them
2 tbls oil
2 cloves garlic minced
46 oz can of tomato juice
12 oz can of tomato paste
2 tbls dried parsley
2 tbls sugar
2 tsp salt
1 tbls dried oregano
1/2 tsp dried thyme
1 bay leaf
1. Dust chicken with flour, brown chicken and garlic in oil, transfer chicken to crock pot
2. Mix together tomato juice, tomato paste, parsley, sugar, salt, organo, thyme, and bay leaf. Pour over chicken and garlic.
3. Cook on low for 4 to 6 hours, serve over pasta (I like it over fettuccine)
I don't know how restrictive his diet is with the salt so you can adjust it. But with the boneless skinless chicken breasts it makes it much leaner than using a cut up fryer which is what the recipe originally called for. For me I'd prefer it over spaghetti marinara cuz you gotta have some meat.
