I hear ya about the meat and potatoes man. My hubby is as well. Here's a good recipe.

Chicken Cacciatore Crock pot style

6 boneless skinless chicken breasts
flour to dust them
2 tbls oil
2 cloves garlic minced
46 oz can of tomato juice
12 oz can of tomato paste
2 tbls dried parsley
2 tbls sugar
2 tsp salt
1 tbls dried oregano
1/2 tsp dried thyme
1 bay leaf

1. Dust chicken with flour, brown chicken and garlic in oil, transfer chicken to crock pot

2. Mix together tomato juice, tomato paste, parsley, sugar, salt, organo, thyme, and bay leaf. Pour over chicken and garlic.

3. Cook on low for 4 to 6 hours, serve over pasta (I like it over fettuccine)

I don't know how restrictive his diet is with the salt so you can adjust it. But with the boneless skinless chicken breasts it makes it much leaner than using a cut up fryer which is what the recipe originally called for. For me I'd prefer it over spaghetti marinara cuz you gotta have some meat.

Oh and Deb it freezes really well so if you use 8 breasts it will totally fill the crock pot and you can freeze the left overs. That's what I love about it. I cook once and get two meals out of it and there are 5 in our home.

he can still be a meat and potatoes kinda guy... make leaner choices or meat and bake of boil potatoes, (skim on the gravy and butter though)

Well if Ken likes salsa, does he like Fajita Chicken?

I have a great recipe that is low in fat, high in flavor, easy to make, and you can slather it with salsa... LOL.

He doesn't like chicken. However tonight the spaghetti with ground trukey was a BIG hit. No one knew the difference except the color of the meat. They all loved it.

My dad ate turkey burgers at my house for 3 years before he found out lol. Then he found out all the ground meat was turkey, the meatloaf he loves is turkey,, he had to admit he liked it!!

Boy's dean in high school had a saying, if you can't impress 'em, BS em! Kinda like buying the plastic bag kind of cheerios and pouring it into the cheerios box. AS IF they even know the difference.

Well so much for that then. Ken would starve around here.

May I introduce you to 93/7 hamburger meat and the george foreman grill?
