Firecracker Grilled Salmon
8 (4 oz) fillets salmon
1/2 cup peanut oil (i didnt have that and used olive oil)
4 tablespoons soy sauce
4 tablespoons balsamic vinegar
4 tablespoons green onions, chopped
3 teaspoons brown sugar
2 cloves garlic, minced
1 1/2 teaspoons ground ginger
2 teaspoons crushed red pepper flakes
1 teaspoon sesame oil
1/2 teaspoon salt
Place salmon in a medium, nonporous glass dish. In a seperate medium bowl, combine the peanut oil, soy sauce,vinegar, green onions, brown sugar, garlic, ginger, red pepper flakes, sesame oil and salt. Whisk together well, and pour over fish. Cover and marinate the fish in fridge for 4-6 hours.
Prepare grill..and lightly oil the grate.
Grill the fillets 5 inches from coals for 10 minutes per inch of thickness, measured at the thickest part, or until fish just flakes with a fork. turn over half way through cooking.
My house went on a low sugar, low sodium diet a couple years ago. (We have a diabetic in the family). I found this really cool cook book. Sadly i don't know what its called. Hey Deb, if he likes fast food, maybe you can getyour friends save some bags from his favorite fast food place and make a "healthy" burrito and wrap it up and put it in there so when he goes to work he won't look whipped and can pull his food out of a "cool" bag instead of a brown paper sack.
Grown up boys get peer pressure from their friends about being percieved as "cool" with the group at meal times too... I had a patient that was totally non-compliant with lunch meals until his wife found out all he wanted to do was look like the rest of the guys at lunch break. Sounds stupid, but hey, anything is worth trying.

You know, if you look at those whole grain pastas they come in a lot of shapes. My kids don't notice spaghetti more than once a week if I use shells one night instead of angel hair. Or use elbow macaroni with the sauce, throw in a can of corn & some green beans and call it goulash.
Taco's one night, and then burritos on a different night, both using the ground turkey and both having 'heart healthy' versions.
Deb it's great that he's compromising on the biscuts and gravy and mac n cheese. In my opinion it is easier to compromise and take steps towards eating properly than to make a hugely drastic change all at once. Then the focus seems more like on what you can't have then the fact that you're trying new things. Oh and on the spaghetti with ground turkey in it I'm bad I would choose just marinara. Or you could make a chicken caccatorie using boneless breasts. I have a crock pot recipe for that let me find it.
