That looks like the keel bone to me. It's pretty common in young heritage birds, which is why US customers don't like them. In a CX that would be covered by at least an 1/8" of muscle at 8 weeks.

What's funny, is that Kris' pictures brought back childhood memories of buying chickens in the grocery store. Mom always said to go for the 3 1/2 pound bird as it was the most tender.

I started picking and buying chickens in 67... They all looked like that back then.

Yep! keel bone, some of them appear a little off center because the birds were put in the blast chiller to bring them down to temp so we could take them home, but they forgot about them and they stayed in a little long, some were semi frozen when they took them out, and they were all just loosely packed in a crate in the blast freezer... oops!
