So what is the "best" age to process Roos? Since I certainly have more than I need I'm probably going to put some in the freezer. A friend told me instead of plucking they just skin them out. Anyone here do that?

Yes, I've skinned either sex. For me it's more about what is convenient at the time. If I don't want to set up the hot water pot I just skin them. But for me the time it takes the same amount of time either way.

I read somewhere to integrate chicks in with the adult flock at 4 weeks old. It seems kind of young to me, but I'm no expert. When do you mix them in?

That does seem quite young unless they have a broody mom and then she would protect them usually. I've had situations where I could at combine at more like 2-3 months. As long as there are monitored very closely the first 3 days. And there must be placed for the babes to go around and have a way out and not be cornered. Extra feed and possibly even extra water stations so the little ones aren't kept away from that. I just did a switcheroo last night in the greenhouse and removed a trio and swapped them out for an older, larger bantam trio. The oldest hen (nearly 4yrs) does not tolerate the babies getting closer to her and WILL peck them. But she isn't looking to attack them and they are learning quick. I added the extra feed pan in a place the adults are less likely to frequent. They are doing good today. But every situation is different and you just have to follow your gut and keep an eye on it. A couple of month ago I had one get cornered by a larger pullet with a teenager attitude and she pecked the back of the younger ones head bad enough that we had to bring her inside for a few days.
 
I think 4 weeks is very young. I have been easing mine in by putting them in a temporary barrier in the chicken yard. They were at least 4 months before they were loose with the rear. I am going to try to upload a video that shows my head hen warning she would hurt them if mixed in at 3months.
